Regains self and says “Ok how about a nice fruity Spinach salad al la tofu for supper?”

It is hot. It is so hot not only has my sweat stayed around to make friends looking at the crockpot, microwave, toaster oven and even the blender is way too much work. It is hot. The community pool which never has anyone in it is jammed to the gills with standing room only. The only thing you can do in it is bob. Frankly bobbing in a hot pool jammed with others is not my idea of fun. The river looks more inviting. It isn’t standing room only but it is darn close.

We had a fast omelet for lunch. Pour into plastic container. Add seasoning and nuke for 5 minutes. One omelet. It was too hot to do much else. By 5 pm it was too hot to do that. My cat was in front of the fan spread and I swear saying “TRY WEARING A FUR COAT SUCKER.” She is such a lady.

We do not do air conditioner. Why? Because except for spells like this we have to have a blanket on at night around here and the house never heats up. The original designer made a house designed to avoid the heat. Had not Penn Dot in all it’s wisdom improved all the things around us, we would still not have a problem. If you haven’t guessed Penn Dot design usually means “worthless money spending” That sums that up.

It is way too hot to cook. So the Fruity Spinach Salad in the Taste of Home cooking for two sounded heaven sent. My addition was simply to take some Mori-Nu tofu. Soak in the dressing [the longer the better. If you know it is going to be a blister tomorrow put in to soak tonight]

Fruity Spinach Salad with Tofu

3 cups loosely packed fresh baby spinach
1/4 cup celery
1/3 cup Mandarin Oranges
1/2 medium apple
1/2 cup seedless grapes, halved
2 tbs sliced almonds, toasted [optional]
a couple grinds of fresh pepper
a hit of Mrs. Dash table top [optional]
1/2 a Mori nu container firm tofu, marinated in 1/4 cup dressing then crumbled
1/4 cup Kens Raspberry Pecan Fat Free Dressing [or other raspberry dressing or vegan sub]

Divide the spinach, celery, oranges, apples, grapes, and tofu between the two plates. Sprinkle on the almonds. Grind on the pepper and sprinkle on the dash. Drizzle with remaining dressing.

Serves 2

Does not heat up the house. I’m game for anything that doesn’t heat up the house.
